France is known for producing the best cheese here are a few of them
    Roquefort
    Les Causses; France
The paste of the cheese alone is a masterpiece; Sheep’s milk expresses a lingering richness, piquant fruit note, and a smelly, gamey quality. These flavors combined with its saltiness, the mouth-filling mold, and sticky-soft paste make for one of the most flavorful cheeses on earth.

    Brie de Melun
    Ile-de-France, France
Brie is perhaps one of the most popular cheeses in the world. In spite of the plethora of knock-offs, real, raw milk brie from the lush pastures of Ile-de-France is a singular pleasure; in particular the bries of the village of Melun stand out. The milk gives the cheese its rustic, lactic backbone, and the molds add an earthy note of mushrooms and garlic.

I love Italia’s cuisine and especially the Italian cheeses.
My number one is Parmigiano Reggiano, the classic Italian cheese.
Parmigiano-Reggiano is a hard, fat granular cheese, cooked but not pressed, named after the producing areas of Parma, Reggio Emilia, Modena, Bologna, in Emilia-Romagna, and Mantova, in Lombardy, Italy. Parmigiano is simply the Italian adjective for Parma; the French version, Parmesan, is used in English. Parmigiano-Reggiano is made from raw cows’ milk.
You must try it. I love it with salad.

For me. the best is the Mozzarella. But it depends, not everyone has same taste for cheese.
Mozzarella is a generic term for several kinds of originally Italian cheeses that are made using spinning and then cutting. For its name – it comes from the Italian verb mozzare which means “to cut”.
    1. mozzarella di bufala, made from water buffalo milk, which in Europe is sold as mozzarella di bufala campana,
    2. mozzarella fior di latte, made from fresh pasteurised or unpasteurised cows’ milk
    3. low-moisture mozzarella, which is made from whole or part skim milk, and widely used in the foodservice industry
    4. smoked mozzarella
Mozzarella of several kinds are also used for most types of pizza, lasagna, or served with sliced tomatoes and basil in Insalata caprese. Due to its high moisture content, it is traditionally served the day it is made.

Mascarpone is a fresh cheese originally from Lombardy; now it is available all over Italy. It is made from fresh cream and sold in muslin bags as dessert cheese to be served with fruit and sugar. Occasionally it is flavored with liqueur.
